CHEESY BACON and EGGS IN A BLANKET
Is it dinner or breakfast? You choose. Tonight, this was our dinner, and it was yummy. My husband leaves the house by five or six o'clock in the early morning, and nobody is hungry at that time of day! Well....at least that's my excuse for not making breakfast, and I'm sticking to it!
I really don't know anyone who doesn't like these, unless you don't care for eggs. You can also use ham, Canadian bacon or sausage if you like. They are quick, easy and delicious!

Ingredients
Eggs
Sliced bread of your choice
butter
Salt & pepper, to taste
Thick cut bacon
Grated Cheddar Cheese
Directions
1. Punch a hole through the middle of the buttered (on both sides) slices of bread (I used whole grain), about 2 inches in diameter. I find that using the rim of a thin glass cup works very well. Remove the extra bread and set aside....eat, or brown along with the eggs, and use for dipping egg yolks.
2. On medium-high heat melt about half a tablespoon of butter in a frying pan. Once the pan is hot, place the bread in, add a little butter in the hole of the bread, and crack an egg into the hole. Salt and pepper that egg. Wait about one to two minutes for the egg to cook enough to turn over. The egg whites will turn an opaque white on the bottom of the pan when it’s ready to be flipped.
3. Slide a big, flat spatula underneath the egg and lift it up from the frying pan. FLIP! Top with 2 slices of cooked bacon and grated cheese. Cover slightly with lid, to allow for cheese to melt. YUM!

We sometimes have breakfast for dinner. This will fit the bill. Well, no meat for me but it all sounds delicious. Very neat site. I'll be back soon.
